Pork Luau, Confetti Rice and Sweet and Sour SlawSweet and Sour Slaw

 

3 tablespoons vegetable oil

3 tablespoons white wine vinegar

2 teaspoons honey

1/4 teaspoon salt

5 cups thinly sliced green cabbage

1 large carrot, peeled and cut into matchstick strips

1 green onion, finely chopped

1 Red Delicious apple, cored and thinly sliced

3/4 cup pitted black olives, cut in half


In large bowl, whisk together oil, vinegar, honey and salt. Add cabbage, carrot and onion; toss until well mixed. Cover and refrigerate 1 to 4 hours.

Remove bowl from refrigerator at least 30 minutes before serving. Toss apple and black olives in cabbage mixture and serve.

Serves 8.
