Plantation Salad
For the Dressing:
1/2 cup orange marmalade
Juice of 1 lemon (about 1/3rd cup)
1/4 teaspoon freshly ground pepper
1/4 cup peanut or vegetable oil
1/3rd cup nonfat sour cream or plain yogurt
1 bunch green onions, thinly sliced
2 tablespoons white vinegar
For the Salad:
1 small head leaf lettuce or other salad greens
1 large ripe avocado, peeled and thinly sliced
1 large orange, peeled and thinly sliced, or sectioned
1 small Bermuda onion, peeled and thinly sliced
1 small fresh pineapple, peeled, cored and sliced into rings or bits
1/4 cup chopped cashews (optional)
For the dressing: Place marmalade and lemon juice in glass measuring
cup. Heat in the microwave oven on high (100 percent power) for 2 minutes
or until marmalade melts. (Or heat mixture in small saucepan over medium
heat.) Stir in remaining dressing ingredients. Chill before serving.
Arrange lettuce on individual serving plates or large serving platter.
Top with avocado, orange, onion and pineapple. Drizzle with dressing and
garnish with cashews, if using. Serves 6.
