Pear and Sweet Pepper Salad

 

Bibb lettuce leaves
1 red Bartlett pear, cored and sliced
1 yellow Barlett pear, cored and sliced
1 each small green and yellow peppers or red peppers, sliced
4 ounces sliced ham, cut into 1-inch strips
Parmesan Dressing (recipe below)

Prepare Parmesan Dressing; set aside.

Arrange lettuce, pears, peppers and ham on four serving plates. Drizzle with parmesan dressing just before serving. Makes 4 servings.

Nutrition facts per serving: 105 calories, 8.3 grams protein, 2.3 grams fat, 14.8 grams carbohydrates, 3.0 grams fiber, 16 milligrams cholesterol and 383 milligrams sodium.

Parmesan Dressing


2 tablespoons vegetable oil
2 tablespoons lemon juice
1 tablespoon water
1 tablespoon chopped chives
1 teaspoon Dijon-style mustard
1 teaspoon sugar
salt and pepper to taste
2 tablespoons Parmesan cheese

Combine all ingredients except Parmesan cheese; mix well. Stir in the Parmsan cheese. Makes about 1/3 cup.
