Dilled Cucumber Salad

 

1 large cucumber
1/2 thinly sliced red onion
1/3 c white vinegar
2 tbsp vegetable oil
1/2 tsp seasoned salt
1 tsp sugar
1 tsp ground black pepper
4 tbsp chopped fresh dillweed

Thinly slice 1 large cucumber, place in shallow bowl with 1/2 thinly sliced red onion. In small bowl, stir together 1/3 cup white vinegar, 2 talbespoons vegetable oil, 1/2 teaspoon seasoned salt, 1 teaspoon sugar and 1 teaspoon ground black pepper, stirring until all sugar dissolves. pour over cucumbers and onions; stir in 4 tablespoons chopped fresh dillweed; toss gently. Let sit at room temperature for an hour. Serves 2 to 3.
