Cream Cheese and Chives Mashed Potatoes

 

1 1/3 pounds (4 medium) potatoes, cut into 1-inch cubes
1/2 cup nonfat cream cheese
1/4 to 1/3 cup 1-percent milk
1/3 cup snipped fresh chives or 2 tablespoons dried snipped chives
salt and pepper, to taste

In medium saucepan, cook potatoes in 2 inches boiling water, covered, about 12 minutes, until tender; drain thoroughly.

Mash potatoes with electric mixer, or potato masher. Mix in cream cheese until melted.

Mix in remaining ingredients. Do not overbeat. Stir gently over low heat just until heated through. Makes 4 servings.

Nutrition facts per serving: 167 calories (2 percent calories from fat), 10 grams protein, 1 grams fat, 33 grams carbohydrates, 3 grams fiber, 6 milligrams cholesterol and 218 milligrams sodium.
