
Grilled Turkey Cutlets
These cutlets can be served "as is" or as a sandwich when
put on a crusty roll.
- 4 large, boneless turkey cutlets, about 1 1/2 pounds
- 1 tablespoon olive oil
- 1/4 cup dill pickle juice
- 1/2 teaspoon ground cumin
- 1/8 teaspoon ground cayenne pepper
- 2 cloves garlic, crushed
- 1 tablespoon finely chopped fresh cilantro
- Dill Pickle Salsa
Pound turkey cutlets to even thickness if necessary. Combine olive oil,
pickle juice, cumin, cayenne pepper, garlic and cilantro in a large bowl.
Add turkey and coat well with marinade.
Marinate in refrigerator for at least one hour or overnight.
Remove cutlets from marinade and grill over hot coals about 10 minutes,
turning once, until golden brown on both sides and no longer pink in the
center. Serve with Dill Pickle Salsa.
