Strawberry Lime Pie

 

2/3 cup boiling water
1 4-serving size package lime-flavored gelatin
1/2 teaspoon grated lime peel
2 tablespoons lime juice
1/2 cup cold water
ice cubes
1 8-ounce tub frozen whipped topping, thawed
1 cup sliced strawberries
1 6-ounce prepared graham cracker crumb crust

Stir boiling water into gelatin a large bowl at least 2 minutes until completely dissolved. Stir in lime peel and lime juice. Mix cold water and ice to make 1 cup. Add to gelatin, stirring until ice is melted.

Stir in 2 1/2 cups of whipped topping with wire whisk until smooth. Gently stir in strawberreis. Refrigerate 30 minutes or until mixture is very thick and will mound. Spoon into crust.

Refrigerate 4 hours or until firm. Garnish with remaining whipped topping, strawberries and lime slices, if desired. Store leftover pie in refrigerator.
