Peach Dumplings
Hancock resident June Elbin has been using this recipe
for Peach Dumplings since 1960.
The insides of the dumplings taste just like cake, says
Elbin, 71.
Peach Dumplings
- 3 cups sliced fresh peaches
- 2 cups water
- 1 cup sugar
- 2 tablespoons lemon juice
Combine peaches, water, sugar and lemon juice in a 3-quart
pan and bring to a boil.
Dumpling mix
- 1 cup prepared pancake mix
- 1/4 cup brown sugar, firmly packed
- 1/4 teaspoon nutmeg
- 1/2 cup milk
- 2 tablespoons shortening, melted
Lightly stir together pancake mix, brown sugar, nutmeg,
milk and shortening. Drop into boiling fruit mixture from tablespoon.
Reduce heat and cover tightly with lid. Cook 15 minutes.
Do not remove cover while cooking.
Serve plain or with whipped topping or ice cream. Serves
6 to 8.
