Easy Chocolate Frozen
Mousse
3 cups miniature marshmallows
1/2 cup milk
1/4 cup cocoa or European style cocoa
1 teaspoon vanilla extract
1 cup (1/2 pint) cold whipping cream
1/4 cup powdered sugar
1/2 cup mini chips semisweet chocolate (optional)
In medium saucepan, place marshmallows, milk and cocoa. Cook over very
low heat, stirring constantly with wire whisk, until marshmallows are melted;
remove from heat. Stir in vanilla; cool completely.
In a small mixer bowl, beat whipping cream and powdered sugar until
stiff; fold into cooled chocolate mixture. Fold in small chocolate chips,
if desired; spoon into dessert dishes. Cover; freeze several hours or until
firm. Serve frozen; garnish as desired. Serves 6.
