Sweet Cherry Ice-Cream
Sandwiches
20-ounce refrigerated roll chocolate chip or vanilla cookie dough
1 1/2 quarts sweet cherry-flavored ice cream
Slice and bake cookies according to package directions. Cool thoroughly.
(Or use packaged or bakery cookies.)
Soften ice cream slightly. Spread about 1/2 cup (or large scoop) of
ice cream on one cooke; top with another cookie. Wrap individually in waxed
paper or plastic wrap and freeze well until firm. Repeat with remaining
cookies and ice cream. Ice-cream sandwiches may be made ahead. Makes 12
servings.
Note: If desired, cookie dough may be rolled and cut into 2 1/2-
to 3-inch squares or other desired shapes.
