Blueberry Delight
Blueberry Delight was born after Robin Poffenberger bought
a similar dessert at a store.
It was delicious but expensive, so the Smithsburg resident
tried to copy the dessert in her own kitchen.
"I moved things around and played with it until I
got it right," says Poffenberger, 36.
The recipe was a winner, and she has been using it for
about three years.
"It's a hot item at my family picnics," Poffenberger
says.
She says Blueberry Delight also is popular with her co-workers
at Ag Center Inc. in Hagerstown.
Blueberry Delight
- 1/4 cup sugar
- 1 package cream cheese, softened
- 1/4 teaspoon vanilla
- 1 regular-size container frozen whipped topping
- 1 9-inch graham cracker crust
- 1 can blueberry pie filling, chilled
Cream sugar, cream cheese and vanilla until smooth. Add
frozen whipped topping and stir until well mixed.
Spread over graham crust and chill. Just before serving,
spread blueberry filling over pie.
Tips: You can double the recipe to make a 9-by-13 inch
dessert, using a graham cracker crust mix instead of a ready-made crust.
Lemon and cherry topping also can be used.
