Cake mix cuts preparation
time
Nancy Ridenour used to make Woopie
Pies from scratch, but it was time-consuming. She came upon a
Woopie Pie recipe in a magazine and tried it. The recipe calls
for using a boxed cake mix.
"To me it's cheating," Ridenour
says.
She calls her new creation Cheater's
Way Woopie Pies and likes the recipe well enough to share it.
"It's a family thing. We like
our woopie pies," Ridenour says.

15 minutes. While cookies are cooling, prepare the filling:

- 4 cups plus 2 tablespoons confectioners'
sugar
- 1 1/2 cups shortening
