Cake mix cuts preparation time

 

Nancy Ridenour used to make Woopie Pies from scratch, but it was time-consuming. She came upon a Woopie Pie recipe in a magazine and tried it. The recipe calls for using a boxed cake mix.

"To me it's cheating," Ridenour says.

She calls her new creation Cheater's Way Woopie Pies and likes the recipe well enough to share it.

"It's a family thing. We like our woopie pies," Ridenour says.

 

Cheater's Way Woopie Pies

  • 1 package devil's food cake mix
  • 1 small box instant chocolate pudding
  • 4 egg yolks and 2 egg whites
  • 1 cup water
  • 1/2 cup butter

Mix the above ingredients together. Drop onto an ungreased cookie sheet and bake at 350 degrees for 15 minutes. While cookies are cooling, prepare the filling:

Filling

  • 2 powdered or pasteurized egg whites
  • 1 teaspoon vanilla
  • 4 tablespoons flour
  • 4 tablespoons milk
  • 4 cups plus 2 tablespoons confectioners' sugar
  • 1 1/2 cups shortening

Mix the first four ingredients, plus 2 tablespoons confectioners' sugar. Then add 1 1/2 cups shortening and 4 cups confectioners' sugar. Spread between two cookies when baked and cooled. These freeze well.
