Oatmeal Raisin Cookies

 

1 cup shortening
1 teaspoon vanilla
1 cup granulated sugar
1 cup brown sugar
2 eggs
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups quick-cooking oatmeal
1 cup white raisins
1/2 cup nuts, chopped

Preheat oven to 350 degrees. Cream shortening, vanilla and sugars until fluffy. Add eggs and beat well.

Sift together flour, baking soda, baking powder and salt. Add dry mixture to cream mixture and stir well. Add oatmeal, raisins and nuts. Stir. Drop by teaspoon 2 inches apart on greased cookie sheet. Bake 12 to 15 minutes.
