Mocha Truffles
1/2 cup butter or margarine
1/2 cup semi-sweet chocolate pieces
1 tablespoon instant coffee crystals
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
2 teaspoons vanilla
2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup semi-sweet chocolate pieces
Melt butter and 1/2 cup chocolate pieces in large pan over low heat.
Stir in coffee crystals; cool 5 minutes. Stir in sugars, eggs and vanilla.
Combine dry ingredients and stir into coffee mixture. Stir in chocolate
pieces. Drop by rounded tablespoons 2 inches apart on greased cookie sheets.
Bake at 350 degrees for 12 minutes. Cool on wire rack. Makes about 30.
