Old-Fashioned Nut Loaf

2 cups flour
2 teaspoons pumpkin pie spice
2 teaspons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 egg
1 egg white
1 1/2 cups solid pack pumpkin
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup undiluted evaporated skim milk
1 tablespoon vegetable oil
1/4 cup chopped nuts

Combine flour, pumpkin pie spice, baking powder, baking soda and salt in a medium bowl.

Blend egg, egg white, pumpkin, granulated sugar, brown sugar, evaporated milk and oil in a large mixing bowl. Add flour mixture; mix just until moistened. Pour into greased 9-by-5-inch loaf pan; sprinkle with nuts.

Bake in a preheated 350-degree oven for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool for 10 minutes. Remove from pan to cool completely on wire rack. Store tightly covered at room temperature or in freezer. Makes 1 loaf; 16 servings.
